The Spiedie (spee-dee) Sandwich is an ethnic Italian dish originally created by Italian immigrants settled in the Southern Tier of New York State. It consists of cubed meat (originally lamb), marinated in a special blend of different ingredients, cooked on an open fire and then served on a slice of fresh Italian bread or a fresh roll. The name Spiedie comes from an Italian word meaning “cooked on a spit”. Today, spiedies are predominently made from chicken or pork, and have been customized to include many different variations.
